Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup shredded coconut Can be toasted for added flavor.
  • 1 cup chopped nuts (walnuts or pecans) Can be toasted for added flavor.

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Add the eggs and vanilla extract to the butter mixture. Beat until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the rolled oats, chocolate chips, shredded coconut, and chopped nuts. Mix until evenly distributed.
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.

Notes

For added flavor, you can toast the coconut and nuts before adding them to the cookie dough.
Store cookies in an airtight container for up to one week.
Feel free to customize the recipe by adding ingredients such as dried fruit or swapping chocolate chips for butterscotch chips.
