Ingredients
  

  • 1 pound ground beef
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste none salt
  • to taste none pepper
  • 1 bag frozen tater tots 32 oz
  • optional none chopped green onions for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  • Add black beans, corn, cream of mushroom soup, garlic powder, onion powder, salt, and pepper to the skillet. Stir until well combined and heated through.
  • In a mixing bowl, combine the cheddar and mozzarella cheese. Reserve half to sprinkle on top later.
  • Pour the beef and bean mixture into a 9x13 inch baking dish, spreading it evenly.
  • Sprinkle the cheese mixture over the beef and bean layer.
  • Arrange the frozen tater tots on top of the cheese layer in a single, even layer.
  • Bake in the preheated oven for 30 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and sprinkle the reserved cheese on top. Return to the oven for an additional 5 minutes, until the cheese is melted and bubbly.
  • Optional: Garnish with chopped green onions before serving.

Notes

Feel free to customize your casserole by adding ingredients like diced tomatoes, jalapeños, or bell peppers.
This dish can be prepared ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the cooking time if baking from cold.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
