  • 1 ½ pounds boneless, skinless chicken breasts cut into vertical strips
  • ¼ cup soy sauce
  • ¼ cup extra virgin olive oil divided
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 ½ pounds baby potatoes halved or quartered
  • 6 tablespoons cowboy butter
  • salt and pepper to taste
  • parsley chopped for garnish

  • Preheat your oven to 400°F.
  • In a large bowl, mix soy sauce with 2 tablespoons olive oil, kosher salt, and black pepper. Toss chicken strips to coat evenly.
  • In another bowl, drizzle potatoes with remaining olive oil, sprinkle salt and pepper, and toss to season.
  • Spread chicken and potatoes on a baking sheet in a single layer.
  • Dot chicken pieces with cowboy butter.
  • Bake for 25-30 minutes. Check for tenderness and garnish with parsley before serving.
