Ingredients
  

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ cup milk
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons vegetable oil Plus extra for cooking.

Instructions
 

  • In a mixing bowl, combine the cottage cheese, flour, eggs, milk, and sugar. Mix well until smooth.
  • In a separate bowl, whisk together the baking powder, baking soda, and salt. Gradually add this dry mixture to the cottage cheese mixture, stirring until just combined. Be careful not to overmix.
  • Heat a non-stick skillet or griddle over medium heat. Add a little vegetable oil to coat the surface.
  • Pour ¼ cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface.
  • Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown. Repeat with the remaining batter, adding more oil as needed.
  • Serve warm with your favorite toppings.

Notes

You can add vanilla extract or cinnamon for extra flavor.
These pancakes freeze well, so feel free to make a larger batch for later consumption. Reheat in a toaster or microwave.
For a healthier option, consider using whole wheat flour or oat flour.
