Ingredients
  

  • 2 cups cottage cheese 16 oz
  • 1 cup shredded cheddar cheese 4 oz
  • ½ cup diced tomatoes canned or fresh, drained if canned
  • ½ cup chopped green onions
  • ¼ cup diced jalapeños fresh or pickled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

  • In a medium saucepan, heat the olive oil over medium heat.
  • Add the diced tomatoes and jalapeños to the pan, cooking for about 3-4 minutes until they soften.
  • Stir in the garlic powder, onion powder, cumin, salt, and black pepper, allowing the spices to bloom for about 1 minute.
  • Reduce the heat to low and add the cottage cheese and shredded cheddar cheese. Stir gently until the cheese is melted and everything is well combined, about 5-7 minutes.
  • If you prefer a smoother dip, transfer the mixture to a blender and blend until you reach the desired consistency.
  • Return the dip to the saucepan and stir in the chopped green onions. Cook for an additional 2 minutes.
  • Remove from heat and serve warm with tortilla chips, crackers, or veggie sticks.

Notes

For added flavor, you can include cooked chorizo, ground beef, or black beans. If you like it spicier, adjust the amount of jalapeños to your taste. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove before serving.
