Ingredients
  

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil

Instructions
 

  • In a mixing bowl, combine the cottage cheese, flour, baking powder, salt, and egg. Stir until well combined.
  • If the dough is too dry, add water a tablespoon at a time until a soft dough forms. The dough should be slightly sticky but manageable.
  • Lightly flour a clean surface and transfer the dough onto it. Knead gently for about 1-2 minutes until smooth.
  • Divide the dough into 4 equal portions and shape each portion into a ball.
  • Using a rolling pin, flatten each ball into a round shape, about ½ inch thick.
  • Heat a frying pan or skillet over medium heat. Add the olive oil and let it warm.
  • Place one flatbread in the skillet and cook for about 3-4 minutes, or until bubbles form and the bottom is golden brown.
  • Flip the flatbread using a spatula and cook the other side for another 3-4 minutes until golden brown.
  • Remove the flatbread from the skillet and keep warm. Repeat with the remaining dough balls.
  • Serve warm, either plain or with toppings of your choice.

Notes

You can season the dough with herbs or spices for added flavor.
These flatbreads can be stored in an airtight container in the refrigerator for up to 3 days.
They can be reheated in a skillet or a toaster for a few minutes.
