In a mixing bowl, combine the cottage cheese, flour, baking powder, salt, and egg. Stir until well combined.
If the dough is too dry, add water a tablespoon at a time until a soft dough forms. The dough should be slightly sticky but manageable.
Lightly flour a clean surface and transfer the dough onto it. Knead gently for about 1-2 minutes until smooth.
Divide the dough into 4 equal portions and shape each portion into a ball.
Using a rolling pin, flatten each ball into a round shape, about ½ inch thick.
Heat a frying pan or skillet over medium heat. Add the olive oil and let it warm.
Place one flatbread in the skillet and cook for about 3-4 minutes, or until bubbles form and the bottom is golden brown.
Flip the flatbread using a spatula and cook the other side for another 3-4 minutes until golden brown.
Remove the flatbread from the skillet and keep warm. Repeat with the remaining dough balls.
Serve warm, either plain or with toppings of your choice.
