  • 15 oz Refrigerated pie crust package
  • 8 oz Low-fat cream cheese room temperature
  • 1 Large egg whisked for brushing
  • 1 teaspoon Vanilla extract
  • 3 8 tablespoon Granulated sugar divided between filling and topping
  • 1 cup Strawberries hulled and chopped; fresh or frozen

  • Preheat your oven to 375°F. This gets everything ready for baking those pies till golden.
  • Mix chopped strawberries with 2 tablespoons of sugar in a bowl and set it aside. This lets ’em soak up some sweet.
  • In another bowl, beat your cream cheese with the remaining 1½ tablespoons of sugar and vanilla extract until real smooth and creamy.
  • Unroll the refrigerated pie crust and cut it into 6 equal squares. This gives you three pies when you fold.
  • Put a spoonful of cream cheese mixture in the middle of 3 squares, then top each with a spoonful of that strawberry mix. It’s filling heaven.
  • Cover each filled square with one of the other 3 crust squares and press edges down with a fork to seal it tight so nothing leaks out during cooking.
  • Brush the tops with your whisked egg for a shiny finish that feels just right once baked.
  • Set pies on a parchment-lined baking sheet and bake 20 to 25 minutes until they’re golden brown and you see that crust crisp up nice.
