- 4 pieces boneless, skinless chicken breasts About 1.5 pounds.
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 16 ounces mushrooms, sliced Preferably cremini or button mushrooms.
- 1 cup chicken broth
- 1 cup heavy cream For a lighter version, you can substitute half-and-half.
- 1 teaspoon dried thyme
- 1 teaspoon paprika

Heat the olive oil in a large skillet over medium heat.
Season the chicken breasts with salt, pepper, and paprika. Add them to the skillet and cook for about 5-6 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
