  • ½ cup butter softened
  • 2 large eggs

Instructions

Instructions

  • Preheat your oven to 350°F. You gotta do this before you start mixing so it’s ready when you need it.
  • In a mixing bowl, combine your flour, shredded coconut, sugar, and softened butter. Use your hands or a fork to mix till crumbly but kinda holding together.
  • Press this crumb mixture firmly into the bottom of a greased 8-inch square baking dish. Make sure it’s packed nice and even.
  • In a separate bowl, whisk your eggs, lemon juice, baking powder, and salt. Whisk till everything is blended smooth and looking bright.
  • Pour that zesty lemon mix over your crust in the baking dish. Spread it out gently so it covers everything evenly.
  • Place the dish carefully in your oven and bake for about 30 minutes. You'll know it's ready when the edges turn golden and the lemon layer feels tender but set.
  • Once the bake time is up, allow the bars to cool completely in the dish. This lets the topping settle and stops it from being runny when you cut.
  • Slice into squares and get ready to enjoy! You’re gonna love that burst of coconut with zesty lemon in every bite.

Notes
