Line an 8x8 inch baking dish with parchment paper.
In a food processor, combine pitted dates, almonds, and walnuts. Pulse until finely chopped.
Add melted coconut oil, coconut flour, desiccated coconut, vanilla extract, and cocoa powder. Blend until thick and even.
(Optional) Use pressure cooker to gently warm the mixture or soften nuts before mixing.
Fold in chopped dark chocolate and flaked almonds by hand.
Press the mixture firmly into the lined baking dish.
Refrigerate for at least 30 minutes, then cut into bars.
Notes
Store energy bars in fridge for up to a week or freeze for longer shelf life. Wrap individually for easy grab-and-go snacks.
