  • 1 cup pitted dates
  • 1 cup almonds
  • 0.5 cup walnuts
  • 2 tablespoons coconut oil melted
  • 0.5 cup coconut flour
  • 0.5 cup desiccated coconut
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder 5g
  • 1 cup chopped dark chocolate
  • 0.25 cup flaked almonds toasted, optional

  • Line an 8x8 inch baking dish with parchment paper.
  • In a food processor, combine pitted dates, almonds, and walnuts. Pulse until finely chopped.
  • Add melted coconut oil, coconut flour, desiccated coconut, vanilla extract, and cocoa powder. Blend until thick and even.
  • (Optional) Use pressure cooker to gently warm the mixture or soften nuts before mixing.
  • Fold in chopped dark chocolate and flaked almonds by hand.
  • Press the mixture firmly into the lined baking dish.
  • Refrigerate for at least 30 minutes, then cut into bars.

Notes

Store energy bars in fridge for up to a week or freeze for longer shelf life. Wrap individually for easy grab-and-go snacks.
