This hearty Paleo beef stew is a comforting and rich dish made easy with a pressure cooker. Tender beef chunks, fresh vegetables, and fragrant herbs come together for a quick yet flavorful meal perfect for chilly days.
Heat olive oil in a big pressure cooker over medium heat. Once hot, add beef chunks and brown them all over to develop flavor and color.
Add diced onion and minced garlic into the pot with beef. Cook for about 2 minutes until translucent.
Add chopped carrots and celery plus dried thyme and rosemary. Stir well and season with salt and pepper.
