  • 1 pound ground beef
  • 1 small onion chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 cans cream of chicken soup 10.25 oz each
  • 1 cup Colby cheese shredded
  • 8 ounces egg noodles
  • butter or spray for greasing baking dish
  • water splash for noodles if pressure cooking
  • parsley or thyme optional herbs to sprinkle on top

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook egg noodles according to the package directions. Drain well and set aside.
  • Brown ground beef and onion in a large skillet over medium heat until beef is browned and onion is soft. Drain excess fat.
  • Add salt, pepper, and cream of chicken soup to the beef and onion. Mix well to combine and heat through.
  • Stir in cooked noodles and shredded Colby cheese until evenly mixed and cheese begins to melt.
  • Grease a 9x13-inch baking dish with butter or cooking spray. Spoon the mixture into the dish and spread evenly.
  • Bake in the oven for 25 to 30 minutes until bubbly and the edges are golden brown.

Notes

Let the casserole cool completely before refrigerating or freezing. Reheat gently to retain creaminess. Sprinkle fresh herbs for added aroma and brightness before serving.
