Preheat your waffle iron and lightly grease it with cooking spray.

In another bowl, beat the eggs and then stir in buttermilk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently mix until combined. Batter will be slightly lumpy.
Pour batter onto the preheated waffle iron, spreading evenly.
Close the waffle iron and cook for about 3-5 minutes until golden and crispy.
