With tender marinated steak, cilantro lime rice, avocado, and finished with a cilantro lime crema, these steak and rice bowls may be simple, but they're packed with flavor. Naturally gluten free, dairy free and so easy to make!
Mix olive oil, lime juice and zest, garlic, cilantro, salt, and black pepper in a bowl to whip up your marinade.
Throw the flank steak in there and flip it around good. Cover and pop it in the fridge for at least 30 mins or let it marinate up to 2 hours if you got time.
Preheat your grill or grill pan on medium-high heat so it’s hot but not cloudy smoky yet.
Pull the steak from the marinade and shake off any drips. Grill each side 5 to 7 mins for medium-rare. You can cook longer if you want done more.
Once it’s off the heat, let the steak rest for a solid 5 mins. That way the juices chill inside the meat instead of running out.
Use your pressure cooker if you wanna speed things up by cooking the steak under pressure instead of grilling. Just marinate, pop it in, and cook until tender using a quick release for safety.
Layer cooked rice, black beans, and corn in bowls while steak rests.
Slice the steak thin against the grain and toss it over your rice mix. Add avocado slices, red onion, cherry tomatoes, and drizzle cilantro lime crema on top for the perfect finish.
