Stuff the turkey cavity with lemon quarters and parsley sprigs. Place turkey in a roasting tin and put it in the oven.
Roast turkey for 2.5 to 3 hours, basting with the butter drippings occasionally.
Boil baby potatoes in salted water for 10 minutes until slightly tender. Drain and gently smash.
Toss smashed potatoes with olive oil, salt, and pepper. Roast for 45 minutes until golden and crispy.
Halve Brussels sprouts and sauté in olive oil for 5 to 7 minutes until tender.
Add chopped pecans and cook a few more minutes for toasted crunch.
