Ingredients
  

  • 1 cup granulated sugar
  • ½ cup unsalted butter Melted for brownie layer.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup unsalted butter Softened for cookie dough layer.
  • ½ cup brown sugar Packed.
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • ½ cup chocolate chips
  • 8 ounces chocolate melting wafers or chocolate chips For coating.

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and line a 9x9 inch baking pan with parchment paper.
  • In a mixing bowl, combine the melted butter and granulated sugar, mixing well.
  • Mix in the eggs one at a time and add the vanilla extract, ensuring everything is well combined.
  • Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined. Do not overmix.
  • Pour the brownie batter into the prepared pan, smoothing the top. Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow to cool completely.
  • In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  • Stir in the vanilla extract. Gradually add the flour and salt, mixing until combined. Fold in the chocolate chips.
  • Once the brownies have cooled, scoop out small portions (about 1 tablespoon each) and press them into balls.
  • Flatten each ball and place a small dollop of cookie dough in the center. Fold the brownie around the cookie dough to form a ball, sealing it completely.
  • Place the brownie bombs on a parchment-lined baking sheet.
  • In a microwave, melt the chocolate melting wafers or chocolate chips in 30-second increments, stirring until smooth.
  • Dip each brownie bomb in the melted chocolate, allowing excess to drip off. Return to the baking sheet.
  • Refrigerate for about 30 minutes, or until the chocolate is set.

Notes

Feel free to customize the cookie dough with nuts or different types of chocolate chips.
Ensure that the cookie dough layer is edible by using heat-treated flour, if concerned about raw flour.
