  • 2 teaspoon Chili powder for smoky spice
  • ½ teaspoon Coriander adds earthy notes
  • ½ teaspoon Cumin adds earthy notes
  • ½ teaspoon Oregano gives a lingering kick
  • pinch Cayenne pepper for extra heat
  • 1 Lime zest freshness
  • ½ bunch Cilantro finely chopped
  • ½ cup Canola oil helps spices cling
  • 4 Boneless skinless chicken thighs or breasts
  • 1 juiced Lime
  • ½ thinly sliced Red onion
  • 2 Jalapeños
  • 1-2 Avocados
  • 4 slices Pepperjack cheese
  • 4 Ciabatta rolls
  • ½ cup Chipotle Sour Cream Sauce can be pre-made

  • Start by mixing your dry spices: kosher salt, chili powder, coriander, cumin, oregano, cayenne pepper, lime zest, and cilantro in a bowl. Add canola oil and stir until you see the marinade come together smooth.
  • Rub that marinade all over your chicken thighs or breasts, making sure each piece is coated real good. Let it sit for at least 15 minutes so the flavors soak in.
  • Preheat a grill or grill pan over medium-high heat and cook chicken about 6-7 minutes each side until it hits 165°F internally.
  • When chicken’s off the heat, let it rest about 5 minutes before slicing. This keeps juices inside making each bite tender and moist.
  • While your chicken rests, toast ciabatta rolls lightly if you wanna add some crunch. Then you stack the sliced chipotle chicken, creamy avocado, jalapeño slices, red onion, and pepperjack cheese right on the bread.
  • Top with some extra cilantro if you’re feeling fancy and spread chipotle sour cream sauce for that extra kick. Serve it up warm and enjoy y’all!

Notes

Store any leftover chicken melts in an airtight container in the fridge within two hours after serving. They’ll keep good for up to 3 days if you wanna reheat later.
If you got avocado leftovers, it’s best to keep it separate wrapped tight with plastic wrap or lemon juice to slow browning.
To reheat, unwrap your sandwich and heat it in a skillet real quick rather than microwave to keep that toasted crust & cheese melty. It works way better and gets you closer to that fresh-outta-the-kitchen feel.
