For Frying the Chicken

  • 1 pound Chicken breasts or thighs skinless boneless, cut in bite-sized pieces
  • 0.25 cup Cornstarch for coating chicken
  • 0.25 cup All-purpose flour helps crisp the chicken
  • 1 teaspoon Ginger garlic paste for base flavor
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • Neutral flavored oil for frying chicken pieces

For the Sauce

  • 3 tablespoons Cooking oil
  • 2 tablespoons Chopped garlic
  • 2-3 Green chilies chopped
  • 1 Large onion cut into 1-inch cubes
  • 1 cup Bell peppers cubed, 1-inch
  • 2 tablespoons Dark soy sauce
  • 4 tablespoons Sweet chili sauce
  • 2 tablespoons Red chili paste
  • 2 tablespoons Tomato ketchup
  • 1 tablespoon Rice vinegar
  • 0.5 teaspoon Salt or to taste
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Cornstarch for slurry
  • 1 cup Water
  • 1 cup Fresh ripe mangoes peeled and cubed
  • Chopped spring onion greens for garnish

  • Cut chicken into bite-sized cubes and toss in a bowl.
  • Mix cornstarch, flour, ginger garlic paste, salt, and black pepper in a bowl. Coat chicken evenly.
  • Heat neutral oil in a pan, fry coated chicken until golden and cooked through. Drain and set aside.
  • In pressure cooker, heat cooking oil. Add garlic and chilies, stir-fry until fragrant.
  • Add onions and bell peppers. Stir briefly, fold in fried chicken.
  • Pour in mango sauce made from soy sauce, chili sauces, ketchup, vinegar, salt, pepper, cornstarch slurry, and mango cubes.
  • Secure lid, bring to pressure and cook for 5 minutes. Quick release after cooking.
  • Stir the dish, let sauce thicken. Garnish with chopped spring onions and serve hot.

Notes

To save time, consider using pre-cut chicken and frozen vegetables. Double-fry chicken for extra crisp texture or bake for a healthier option. Store leftovers properly for easy meal prep.
