  • 1 pound ground beef 90/10 or something close so it’s not too greasy
  • 1 small yellow onion diced small so it melts into the chili
  • 2 cloves garlic minced fresh
  • ½ teaspoon salt keeps it flavorful but not salty
  • ¼ teaspoon ground pepper just a little kick
  • 15 ounce can chili with beans any flavor you like, sauces and all
  • 1 ½ cups shredded cheddar cheese sharp or mild
  • 32 ounce bag frozen tater tots for crispy topping

  • Preheat oven to 400°F.
  • Brown ground beef in a skillet over medium heat until no pink remains, about 5–7 minutes.
  • Add diced onion and minced garlic. Sauté for 3–4 minutes until onions are soft.
  • Season with salt and pepper, then stir in the can of chili with beans.
  • Let the mixture simmer for a couple of minutes for flavors to combine.
  • Transfer beef and chili mix to a 9x13 baking dish and spread evenly.
  • Sprinkle 1 cup of shredded cheddar cheese evenly on top.
  • Arrange frozen tater tots in a single layer over the cheese.
  • Bake at 400°F for 25–30 minutes until tater tots are golden brown and crisp.
  • Sprinkle remaining shredded cheese on top and bake for another 5 minutes. Let cool slightly and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. For freezing, wrap well and store up to 3 months. Reheat in oven for best texture.
