Preheat oven to 400°F.
Brown ground beef in a skillet over medium heat until no pink remains, about 5–7 minutes.
Add diced onion and minced garlic. Sauté for 3–4 minutes until onions are soft.
Season with salt and pepper, then stir in the can of chili with beans.
Let the mixture simmer for a couple of minutes for flavors to combine.
Transfer beef and chili mix to a 9x13 baking dish and spread evenly.
Sprinkle 1 cup of shredded cheddar cheese evenly on top.
Arrange frozen tater tots in a single layer over the cheese.
Bake at 400°F for 25–30 minutes until tater tots are golden brown and crisp.
Sprinkle remaining shredded cheese on top and bake for another 5 minutes. Let cool slightly and serve.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. For freezing, wrap well and store up to 3 months. Reheat in oven for best texture.
