- 2 cans chickpeas, drained and rinsed 15 oz each.
- 1 can diced tomatoes 14 oz.
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 medium bell pepper, diced any color.
- 2 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish optional.
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for about 5 minutes, or until the onions are translucent.
Add the minced garlic, diced carrot, and diced bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
Stir in the ground cumin, smoked paprika, and dried oregano. Cook for another minute to toast the spices.
Add the drained chickpeas and diced tomatoes (with their juices) to the pot. Pour in the vegetable broth and stir to combine.
