1 Knife
1 Cutting board
- 2 tablespoons olive oil
- 1 pound cooked chicken breast, shredded
- 12 ounces spaghetti
- 1 can Ro-Tel diced tomatoes with green chilies 10 oz
- 1 can tomato sauce 15 oz
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheese cheddar or Monterey Jack
- to taste fresh parsley for garnish optional
Heat olive oil in a large pot over medium heat.
Add the shredded chicken to the pot and sauté for about 2-3 minutes until heated through.
Add the Ro-Tel diced tomatoes, tomato sauce, chicken broth, garlic powder, onion powder, paprika, salt, and black pepper. Stir well to combine.
Bring the mixture to a gentle boil, then reduce heat to low.
Add the spaghetti directly to the pot and stir until it is submerged in the sauce.
Cover the pot and let it simmer for about 20 minutes, stirring occasionally, until the spaghetti is cooked al dente and the sauce has thickened.
Once the spaghetti is cooked, remove the pot from heat and stir in the shredded cheese until melted and creamy.
Serve hot, garnished with fresh parsley if desired.
You can adjust the spice level by using mild or hot Ro-Tel tomatoes based on your preference.
This dish is great for leftovers and can be easily reheated the next day.
Feel free to add vegetables such as bell peppers or zucchini for added nutrition.
