- ¼ cup olive oil
- ¼ cup lemon juice (about 2 large lemons)
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 pieces boneless, skinless chicken breasts (about 1.5 to 2 pounds)
In a mixing bowl, combine the olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and black pepper. Whisk the mixture until fully blended.
Place the chicken breasts in a plastic zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated.
Seal the bag tightly or cover the dish with plastic wrap. Refrigerate for at least 30 minutes to 2 hours for optimal flavor.
Preheat your grill or oven to 375°F (190°C).
Remove the chicken from the marinade, letting any excess marinade drip off. Discard the used marinade.
Grill the chicken for about 6-7 minutes per side or bake in the oven for about 20-25 minutes, until the internal temperature reaches 165°F (75°C).
Let the chicken rest for 5 minutes before slicing. Serve with your favorite sides.
This marinade can also be used for chicken thighs or other cuts.
