Ingredients
  

  • 1 pound chicken breast, boneless and skinless about 450g
  • 2 cups cooked rice white or brown
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 1 cup salsa store-bought or homemade
  • 1 avocado sliced
  • ½ cup shredded cheese optional, such as cheddar or Monterey Jack
  • for garnish fresh cilantro optional
  • for serving lime wedges optional

Instructions
 

  • Start by cooking the rice according to package instructions. Set it aside when done.
  • While the rice is cooking, prepare the chicken. Cut the chicken breast into bite-sized pieces.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces to the skillet and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and browned.
  • Add the sliced bell peppers and onion to the skillet with the chicken. Sauté for an additional 5-7 minutes or until the vegetables are softened and slightly charred.
  • In bowls, layer the cooked rice at the bottom, followed by the chicken and veggie mixture on top.
  • Top each bowl with salsa, sliced avocado, shredded cheese (if using), and fresh cilantro. Serve with lime wedges on the side.
  • Feel free to customize your burrito bowl with additional toppings like sour cream, black beans, or corn.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
