  • 2 cups cheddar cheese shredded
  • 6 strips bacon
  • salt/pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 boneless skinless chicken breasts small
  • 2 cups rotini pasta uncooked
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon garlic minced
  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix

  • Cook the bacon in a skillet on medium heat until crispy. Remove and place on paper towels to cool. Crumble it.
  • Season chicken with salt, pepper, onion powder, and Italian seasoning. Cook in same skillet until golden brown and fully cooked. Cut into bite-sized pieces.
  • Boil salted water and cook rotini pasta until al dente. Drain and set aside.
  • In the skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
  • Add flour and whisk for 1-2 minutes to form a roux.
  • Gradually whisk in half and half. Bring to a simmer and cook for 5 minutes until thickened.
  • Stir in dry ranch seasoning and shredded cheddar cheese until melted and smooth.
  • Mix in cooked chicken, bacon, and pasta. Toss to combine and heat through. Serve warm.

Notes

You can swap rotini with penne or other pasta types. Make it dairy-free using plant-based alternatives. Add vegetables like peas or spinach for extra nutrition.
