  • 2 cups cheddar cheese shredded
  • 6 strips bacon
  • salt and pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 small boneless skinless chicken breasts
  • 2 cups uncooked pasta rotini recommended
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon garlic minced
  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix

  • Cook pasta until al dente. Drain and set aside.
  • Crisp bacon in a skillet, then place on paper towels to cool. Crumble when cooled.
  • Season chicken with salt, pepper, onion powder, and Italian seasoning. Cook in bacon drippings for 5-7 minutes per side. Dice when done.
  • Melt butter in skillet and add garlic. Cook for 1 minute, then whisk in flour. Cook for 1-2 minutes while stirring.
  • Slowly whisk in ranch mix and half and half. Stir until thickened, around 3-5 minutes. Then stir in most of the cheddar cheese until melted.
  • Add cooked pasta, diced chicken, and crumbled bacon into the sauce. Stir together and heat thoroughly.
  • Sprinkle remaining cheese on top and cover until melted. Serve warm.

Notes

You can use rotisserie chicken instead of raw chicken breasts. Pre-cooked bacon bits work in place of fried bacon. Whole milk can substitute half and half, but sauce will be thinner.
