Season chicken breasts with salt and pepper on both sides.
Heat olive oil in skillet over medium-high heat, cook chicken for 6-7 minutes per side. Let rest, then slice thinly.
In a small bowl, mix mayonnaise and Dijon mustard to make a spread.
Spread mayo-mustard mixture on one side of each bread slice.
On two slices, layer chicken, avocado, tomato, red onion, and cheese. Top with remaining bread, spread side down.
Heat butter or olive oil in skillet over medium heat. Grill sandwiches 3-4 mins per side until golden and cheese is melted.
Remove from heat, slice sandwiches in half, and serve warm.
Notes
Store leftover chicken in an airtight container for up to 3 days. Warm up grilled sandwiches in skillet or oven to preserve crispiness.
