  • Preheat the oven to 350 degrees Fahrenheit. You gotta get the pan ready so it’s ready for batter straight away.
  • Melt butter over medium heat in your saucepan. Watch it carefully, nobody wants burnt butter in the mix.
  • Add light brown sugar to melted butter and stir until smooth. The warm sugar scent soon fills the air - it’s a good sign.
  • Remove the pan from heat and let it cool down just a bit. You don’t wanna scramble your eggs when you mix ‘em in later.
  • In another bowl, whisk your eggs and vanilla extract together till combined and frothy. It adds a lil’ fluff to your bars.
  • Gradually pour the egg mixture into the warm butter and sugar, stirring constantly. This keeps the batter smooth without cooking the eggs too fast.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Mixing dry ingredients first helps even distribution without lumps.
  • Fold the dry mix into wet mixture gently but fully. Finally, stir in the sweetened coconut until it’s well blended into the batter. Pour everything into a greased or parchment-lined 9 by 13 inch pan baked for 25-30 minutes. Check it around 25 minutes using a toothpick - you want just a tender pull when it comes out clean.
