Cherry Almond Tiramisu Pressure Cooker Recipe

A no-bake pressure cooker twist on cherry almond tiramisu that's silky, fruity, and infused with amaretto for the perfect chilled dessert.

  • cups pitted sweet cherries roughly chopped (250g)
  • 2 tablespoons granulated sugar for cherry mix (25g)
  • 1 teaspoon cornstarch
  • 2 teaspoons water for cherry glaze
  • 2 tablespoons granulated sugar for Amaretto soak (25g)
  • 2 tablespoons water for Amaretto soak
  • ¼ cup Amaretto (60mL)
  • 15 lady fingers
  • 8 oz mascarpone cold
  • ¼ cup granulated sugar for mascarpone cream (50g)
  • 2 egg yolks cold
  • 2 tablespoons heavy whipping cream (30g)
  • 1 teaspoon vanilla paste or extract
  • ¾ cup heavy whipping cream for topping (179g)
  • 2 tablespoons powdered sugar for topping (15g)
  • 1 teaspoon vanilla for topping
  • freeze dried cherries or cocoa powder optional garnish

  • In a saucepan over medium heat, combine cherries, 2 tablespoons sugar, cornstarch, and 2 teaspoons water. Cook, stirring, until thickened (8–10 mins), then cool.
  • In another pan, heat 2 tablespoons sugar with 2 tablespoons water and Amaretto just until sugar dissolves. Remove and cool.
  • Whisk mascarpone with ¼ cup sugar until smooth and fluffy. Incorporate egg yolks, 2 tablespoons cream, and vanilla until blended.
  • Dip lady fingers quickly into cooled Amaretto syrup to prevent sogginess.
  • Layer dipped lady fingers in serving dish. Spread half mascarpone cream, then half cherry syrup on top.
  • Repeat layering with remaining lady fingers, cherry syrup, and mascarpone cream.
  • Cover and refrigerate tiramisu for at least 4 hours or overnight to set.
  • Before serving, whip topping cream with powdered sugar and vanilla. Spoon over tiramisu and garnish optionally.

Notes

Store covered in the fridge for up to 3 days. For alcohol-free version, substitute Amaretto with almond extract and water.
