In a saucepan over medium heat, combine cherries, 2 tablespoons sugar, cornstarch, and 2 teaspoons water. Cook, stirring, until thickened (8–10 mins), then cool.
In another pan, heat 2 tablespoons sugar with 2 tablespoons water and Amaretto just until sugar dissolves. Remove and cool.
Whisk mascarpone with ¼ cup sugar until smooth and fluffy. Incorporate egg yolks, 2 tablespoons cream, and vanilla until blended.
Dip lady fingers quickly into cooled Amaretto syrup to prevent sogginess.
Layer dipped lady fingers in serving dish. Spread half mascarpone cream, then half cherry syrup on top.
Repeat layering with remaining lady fingers, cherry syrup, and mascarpone cream.
Cover and refrigerate tiramisu for at least 4 hours or overnight to set.
Before serving, whip topping cream with powdered sugar and vanilla. Spoon over tiramisu and garnish optionally.
Notes
Store covered in the fridge for up to 3 days. For alcohol-free version, substitute Amaretto with almond extract and water.
