Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper if desired for easy cleanup.
In a mixing bowl, combine cooked ground beef, shredded cheddar cheese, diced tomatoes, sliced black olives, and chopped green onions. Mix well.
Unroll the crescent roll dough and separate it into 4 triangles.
Using a rolling pin, flatten each crescent triangle slightly for easier rolling.
Place a generous amount of the taco mixture onto the wider end of each triangle.
Roll the dough starting from the wide end to the pointed end, tucking in the sides as you go to prevent the filling from spilling out.
Place the rolled taco sticks seam-side down on the prepared baking sheet.
Brush the tops of the taco sticks with the beaten egg. If desired, sprinkle with taco seasoning for extra flavor.
Bake in the preheated oven for 15 minutes or until golden brown and puffed.
Once done, remove from the oven and let cool slightly before serving.
Serve warm with salsa on the side for dipping.
