  • 1 tablespoon olive oil for cooking onions and peppers
  • 1 small onion about 1 cup chopped
  • 1 lb ground beef or turkey
  • 1 15 oz can Sloppy Joe sauce with a splash of water
  • 1 cup shredded cheddar cheese

  • Heat olive oil in your pressure cooker on the sauté setting until it’s shimmering.
  • Add chopped onion and green bell pepper. Sauté ‘til they soften up, about 5 minutes.
  • Throw in the cubed potatoes and cook another 10 minutes, stirring now and then so nothing sticks or burns.
  • Next up, add your ground beef or turkey. Brown it well, breaking it up so it cooks evenly.
  • Mix in chopped tomato and Sloppy Joe sauce. Add a splash of water if necessary.
  • Close the lid, set to pressure cook on high for 10 minutes.
  • Once finished, do a quick release. Sprinkle cheddar on top, close lid, and let melt for 3-5 minutes.

Notes

Serve warm and enjoy the cheesy goodness. Store leftovers in airtight containers and reheat gently.
