Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease your muffin pan with cooking spray or butter.
Mix mashed potatoes, cheddar cheese, egg, chives, flour, garlic powder, salt, and pepper in a bowl.
Spoon mixture into greased muffin cups, filling each about ¾ full.
Sprinkle grated Parmesan cheese on top of each puff.
Bake in the oven for 25 to 30 minutes until tops are golden brown.
Let cool a few minutes before removing from the pan.
Gently lift each puff out and serve warm.
Notes
For extra flavor, try adding a pinch of paprika or cayenne to the potato mixture. These puffs can be made ahead and reheated in the oven.
