Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 can diced tomatoes, undrained 15 oz / 425 g
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium heat. Add diced onion and cook until the onion is translucent. Drain excess fat if necessary.
  • Stir the rice into the skillet and cook for 1-2 minutes, allowing it to absorb some of the flavors.
  • Pour in the beef broth, diced tomatoes (with juice), milk, garlic powder, paprika, and season with salt and pepper. Stir well to combine.
  • Bring the mixture to a gentle simmer, then cover and let it cook for 15-20 minutes, or until the rice is tender and most of the liquid is absorbed.
  • Once the rice is cooked, stir in 1 ½ cups (150 g) of shredded cheddar cheese until melted and well distributed.
  • Transfer the mixture into a greased 9x13 inch baking dish. Sprinkle the remaining ½ cup (50 g) of cheese on top.
  • Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  • Allow to cool for a few minutes before serving.

Notes

You can customize this casserole by adding your favorite vegetables or spices.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
This dish pairs well with a green salad or garlic bread for a complete meal.
