Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced (about 4 cups)
  • 4 cups beef broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese (about 8 oz or 225 g)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (optional)
  • 2 tablespoons olive oil

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic to the pot, sautéing for about 3-4 minutes until they become fragrant and the onion is translucent.
  • Add the ground beef to the pot, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess grease if necessary.
  • Stir in the diced potatoes, beef broth, salt, black pepper, and paprika (if using). Bring the mixture to a boil.
  • Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 15 minutes, or until the potatoes are tender.
  • Stir in the milk and shredded cheddar cheese. Stir until the cheese is melted and the soup is creamy, about 3-5 minutes.
  • Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
  • Serve warm, garnished with additional cheese or chopped green onions if desired.

Notes

For a thicker soup, you can mash a few of the potatoes after they are cooked or blend a portion of the soup before adding the cheese. Feel free to add vegetables like carrots or peas for extra nutrition. This soup stores well in the refrigerator for up to 3 days or can be frozen for longer storage.
