  • 1 Can Cream of Mushroom Soup
  • 1 Cup Long Grain White Rice uncooked
  • 2 Cups Water
  • 1 Cup Carrots sliced
  • ½ to 1 Pound Ground Beef cooked
  • 9 slices Cheddar or Colby Jack Cheese
  • ¼ Cup Onion minced
  • 1 Clove Garlic minced
  • 3 Tablespoons Unsalted Butter
  • ½ Cup Milk

  • Cook the ground beef in a skillet, breaking it up until browned. Drain excess fat.
  • Turn on the pressure cooker and add butter, onion, and garlic. Sauté until onion is translucent.
  • Combine soup, milk, water, carrots, rice, and beef in a bowl. Stir to combine.
  • Pour mixture into pressure cooker pot. Close lid and cook on high pressure for 8 minutes.
  • Allow pressure to release naturally for 10 minutes. Carefully open lid.
  • Top casserole with sliced cheese and let melt. Use sauté feature for extra melty cheese if desired.

Notes

Adjust cheese quantity to desired level of cheesiness. Serve with a side salad for a complete meal.
