In a large bowl mix 2 cups cold mashed potatoes, 4 thick slices of bacon, ¾ cup shredded cheddar cheese, and 2 green onions, thinly sliced.
Sprinkle in the flour and pour the beaten egg over it. Stir well to mix thoroughly.
Form small balls about 1 inch in diameter from the mixture.
Roll each ball in breadcrumbs to coat evenly.
Heat oil in a deep frying pan on medium heat.
Fry potato balls in batches for 4-5 minutes or until golden brown and crispy.
Use a slotted spoon to remove and drain on paper towels.
Serve immediately with sour cream or ranch dressing.
Notes
Leftovers may be refrigerated and quickly re-fried in hot oil or reheated in the microwave for 15 to 30 seconds.
