In a large skillet, heat a little oil over medium heat. Add the diced onion and cook until soft, about 3-4 minutes.
Add the ground beef to the skillet, and cook until it’s browned, breaking it up with a spatula, about 5-7 minutes.
Season the beef with garlic powder, cumin, chili powder, salt, and pepper. Stir well to combine and cook for an additional 2-3 minutes.
In a medium pot, warm the tortillas over low heat for about 1 minute on each side, or until pliable.
To assemble the burritos, place about ¼ of the beef mixture onto the center of each tortilla.
Top with shredded cheddar cheese and salsa, then carefully fold in the sides of the tortilla and roll it from the bottom to the top to enclose the filling.
Place each burrito seam-side down on a plate or tortilla warmer.
Serve each burrito with a generous dollop of sour cream and an extra spoonful of salsa on the side.
Garnish with fresh cilantro if desired.
