Ingredients
  

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 can (15 oz) black beans rinsed and drained.
  • 1 packet taco seasoning
  • 1 cup salsa for topping.
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 bell pepper bell pepper chopped
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • optional sour cream for garnish
  • optional avocado for garnish
  • optional jalapeños for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, cooking until softened (about 5 minutes).
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through (around 7-10 minutes).
  • Stir in the taco seasoning, garlic powder, and black beans. Mix well and let it simmer for an additional 3 minutes. Season with salt and pepper to taste.
  • Preheat your oven to 350°F (175°C).
  • Lay each flour tortilla flat and distribute the cooked rice evenly among them. Top with the beef mixture and sprinkle with shredded cheese.
  • Roll each tortilla tightly, tucking in the sides as you go. Place them seam-side down on a baking sheet.
  • Bake in the preheated oven for about 15 minutes, or until the tortillas are golden and the cheese is melted.
  • Remove from the oven, let cool for a minute, and top with salsa before serving. Optional garnishes like sour cream, avocado, or jalapeños can be added on top.
