Heat olive oil in a large skillet over medium heat. You gotta wait for that oil to shimmer a little before adding anything.
Add chopped onion and garlic. Sauté these until they turn translucent and smell dang good. This usually takes about 3-4 minutes.
Put in the ground beef and cook it until it browns nicely. Make sure you break it apart as it cooks so it cooks evenly.
Stir in the mushrooms, oregano, cumin, salt, and pepper. Let this cook for about 5 more minutes so everything kinda melds together.
Remove the skillet from the heat and mix in your shredded cheese until it melts and you see it getting all gooey.
Fill each pita half with the cheesy beef and mushroom mixture. Serve these warm and don’t forget the tzatziki sauce on the side for dipping!
