Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Take each mozzarella stick and wrap it with a slice of bacon completely. Secure the ends with a toothpick if necessary.
In three separate shallow dishes, prepare a flour station, an egg wash, and a breadcrumb coating: place flour in one dish, whisk eggs in the second dish, and mix breadcrumbs with garlic powder, Italian seasoning, and paprika in the third dish.
Dip each bacon-wrapped mozzarella stick first into the flour, coating it evenly. Shake off any excess flour.
Next, dip the floured sticks into the egg wash, allowing any excess to drip off.
Finally, roll the sticks in the breadcrumb mixture to achieve a generous coating.
Place the coated mozzarella sticks on the prepared baking sheet. Lightly spray or brush with cooking spray to promote even browning.
Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and the cheese begins to ooze out. Keep an eye on them to prevent burning.
Remove from the oven and let cool slightly before serving. Enjoy with your favorite dipping sauce!
