Cauliflower Steak Pressure Cooker Style

This roasted cauliflower steak is seasoned with olive oil and spices, then baked until tender on the inside and golden-brown on the outside.

  • Olive oil spray to keep these steaks from sticking and add a little golden crisp
  • 2 medium Cauliflower heads
  • 1 teaspoon Diamond Crystal kosher salt divided
  • ½ teaspoon Black pepper divided
  • 1 teaspoon Garlic powder divided
  • 1 teaspoon Paprika divided
  • 1 teaspoon Coriander divided
  • Extra olive oil spray for spraying before baking

  • Preheat your oven to 425 degrees Fahrenheit. This gets the crust crispy after the pressure cooker tenderizes.
  • Slice the cauliflower heads into thick steaks about 1 inch wide. Don't be shy, thickness gives that nice tender pull.
  • Spray a baking sheet with olive oil spray so your cauliflower doesn't stick while roasting.
  • Place the cauliflower steaks on the sheet and give the tops a good spray of olive oil spray. Season both sides of each steak with half your salt, quarter of the black pepper, garlic powder, paprika, and coriander first.
  • Put your cauliflower steaks to bake in the oven for 25 to 30 minutes. About halfway flip them over so both sides get that golden crust.
  • While roasting, set up your pressure cooker with 1 cup of water and the trivet or rack for steaming the cauliflower. Once the steaks are baked, pop them in the pressure cooker for 5 minutes on high pressure to get that tender pull. When done, let the pot go through natural release for a few minutes then slow release to finish.
