Preheat your oven to 425 degrees Fahrenheit. This gets the crust crispy after the pressure cooker tenderizes.
Slice the cauliflower heads into thick steaks about 1 inch wide. Don't be shy, thickness gives that nice tender pull.
Spray a baking sheet with olive oil spray so your cauliflower doesn't stick while roasting.
Place the cauliflower steaks on the sheet and give the tops a good spray of olive oil spray. Season both sides of each steak with half your salt, quarter of the black pepper, garlic powder, paprika, and coriander first.
Put your cauliflower steaks to bake in the oven for 25 to 30 minutes. About halfway flip them over so both sides get that golden crust.
While roasting, set up your pressure cooker with 1 cup of water and the trivet or rack for steaming the cauliflower. Once the steaks are baked, pop them in the pressure cooker for 5 minutes on high pressure to get that tender pull. When done, let the pot go through natural release for a few minutes then slow release to finish.
