  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper seeded and chopped
  • 1 Yellow Onion chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix like Bisquick
  • 1 cup Water
  • Cooking Spray like Pam
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles drained
  • 1 ½ cups Cheddar Cheese Fiesta Blend, shredded and divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa mild

  • Preheat your oven to 350℉ or 175℃, so it's all ready when your casserole goes in.
  • In a large skillet, brown the lean ground beef over medium heat. You want it fully cooked, no pink left.
  • Toss in the chopped red bell pepper and yellow onion, cooking them for about 5 minutes until they're softened and smell amazing.
  • Stir in the taco seasoning mix real good, making the beef mixture burst with flavor.
  • In another bowl, mix the biscuit mix and water until you get a dough that's soft but holds together.
  • Spray your casserole dish with cooking spray. Then spread that beef mixture evenly across the bottom.
  • Dollop the sour cream and mayonnaise right over the beef, kinda like little creamy islands. Then sprinkle on drained diced green chiles.
  • Spoon the biscuit dough in chunks evenly over the top. Pop it in the oven and bake about 30 minutes till the biscuit topping is golden and crispy on the edges.

Notes
