  • 1.5 pounds Lean Ground Beef yep you want the lean to keep it from too greasy
  • 1 Red Bell Pepper seeded and chopped giving that nice sweet crunch
  • 1 Yellow Onion chopped, for that classic base flavor
  • 1 ounce Taco Seasoning Mix for a spicy kick
  • 2 ½ cups Biscuit Mix like Bisquick for biscuit topping
  • 1 cup Water to bring biscuit mix together
  • Cooking Spray like Pam, to prevent sticking
  • ½ cup Sour Cream for creamy spread
  • ½ cup Mayonnaise for creamy spread
  • 4 ounces Diced Green Chiles for creamy spicy spread
  • 1 ½ cups Cheddar Cheese Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder to add depth
  • ½ cup Salsa mild, to brighten things up

Instructions

  • Preheat your oven to 350°F or 175°C so it's ready for the biscuit top later.
  • In a large skillet, brown lean ground beef over medium heat. Drain excess fat.
  • Throw in chopped red bell pepper, onion, and taco seasoning. Cook until veggies soften, about 5 minutes.
  • Combine biscuit mix and water in a bowl and stir to form a dough. No need to overwork.
  • Grab a 9x13 inch baking dish, spray with cooking spray. Spread beef mixture across the bottom.
  • Spoon biscuit dough over beef, spread to cover evenly.
  • Mix sour cream, mayo, and diced green chiles. Spread this over the biscuit topping.
  • Place in oven for 30 minutes until golden and bubbly. Let cool slightly before serving.

Notes

Serve with avocado slices, side salad or pico de gallo.
