  • ½ cup packed brown sugar
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup melted butter not hot
  • 4 large eggs
  • 2 cups grated carrots fresh and finely shredded
  • ½ cup chopped walnuts or pecans optional
  • ½ cup raisins optional
  • 8 ounces cream cheese for frosting
  • 1 cup unsalted butter for frosting
  • 2 cups sifted powdered sugar for frosting
  • 1 teaspoon vanilla extract for frosting

  • Grease a 9x13 inch pan to ensure nothing sticks while using the pressure cooker.
  • Whisk together flour, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, salt, and baking soda in a large bowl.
  • In a separate bowl, mix melted butter and eggs until smooth.
  • Slowly add wet ingredients to dry ingredients, stirring until just combined. Fold in grated carrots and optional nuts or raisins.
  • Pour batter into the greased pan and smooth the top.
  • Place pan on a trivet in the pressure cooker and cook on high pressure for 25 minutes. Quick release pressure when done.
  • Allow the carrot cake bars to cool before applying cream cheese frosting.
