  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 teaspoons cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup melted butter cooled
  • 4 large eggs
  • 2 cups grated fresh carrots
  • ½ cup chopped walnuts or pecans optional
  • ½ cup raisins optional
  • 8 ounces cream cheese softened
  • 1 cup unsalted butter softened
  • 2 cups sifted powdered sugar
  • 1 teaspoon vanilla extract

  • Preheat your oven to 350 degrees Fahrenheit and grease a 9 by 13 inch baking pan.
  • Whisk together all your dry ingredients: flour, granulated and brown sugar, cinnamon, nutmeg, ginger, salt, and baking soda.
  • Blend melted butter with the eggs in another bowl until smooth.
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined.
  • Pour the batter into the prepared pan and spread it out evenly.
  • Bake the bars in the oven for around 30 minutes. Check doneness with a toothpick.
  • Let the bars cool completely before applying the cream cheese frosting.

Notes

If you’re in a rush, pre-grate your carrots and keep them sealed in the fridge. Soften cream cheese and butter in the microwave for the frosting. Skip nuts or raisins if desired.
