Core and thinly slice both the sweet red and tart green apples. Then put those apples in a large bowl.
Next, toss in the matchstick carrots. Stir gently.
In a separate bowl, whisk together lemon juice, mayo, yogurt, honey, and rice wine vinegar. Pour over apple/carrot mixture.
Toss gently to coat the apples and carrots with the dressing.
Put the whole mix in the pressure cooker, lock the lid tight. Cook on high pressure for a short duration.
Once cooked, perform a natural release. Open the cooker and fold in crumbled feta cheese and dried cranberries before serving.
Notes
You may use all yogurt or all mayonnaise if you prefer, but realize that doing so will slightly affect the flavor of the dressing.
