  • 2 tablespoons olive oil for that good base flavor
  • 4 medium yellow onions halved and sliced
  • ½ teaspoon salt plus more to taste
  • 1 teaspoon granulated sugar optional, helps caramelize faster
  • 12 ounces pasta of your choice pick your fave, gluten-free works too
  • ½ to 1 cup shredded parmesan or vegan parm melty cheesy goodness
  • 2 to 3 tablespoons chopped fresh parsley to brighten up the flavors
  • fresh ground black pepper for a little kick at the end

  • Heat your pressure cooker or a big skillet on medium. Add the olive oil – you want it nice and warm.
  • Toss in sliced onions with a pinch of salt. Stir them up so they get coated real good.
  • Cook the onions till they start to soften – about 10 minutes. Don’t rush, gentle heat is key.
  • Sprinkle in the sugar if you’re using it. Keep the heat low now and stir every few minutes like you’re gently coaxing them to caramelize.
  • Switch to your pressure cooker. Saute the onions till soft, then lock the lid and set it to cook under pressure for a short time – 15 minutes should get you a tender pull and nice color real quick.
  • While onions finish, cook your pasta in boiling water with salt till just al dente – don’t forget to save about 2 cups of pasta water before draining.
  • Mix the caramelized onions back with your drained pasta plus some reserved water and toss in the parmesan and parsley. Stir till that cheese melts and everything clings together like you imagined.

Notes

If you want to keep onions from drying out during pressure cooking, toss in a splash of water or broth before you lock the lid. When reheating, add a splash of water or broth to loosen it up.
