Ingredients

  • 4 tablespoons unsalted butter butter melts your base, but olive oil works too if you're out.
  • 1 medium yellow onion diced for that sweet, soft flavor base.
  • 1 medium green bell pepper diced adds freshness and color.
  • 2 stalks celery diced for subtle crunch and aroma.
  • 3 cloves garlic minced to bring out that savory kick.
  • 1 pound andouille or smoked sausage sliced for smoky depth that screams Cajun style.
  • 2 pounds russet potatoes peeled and diced into ½-inch cubes, perfect for creamy texture.
  • 4 cups low-sodium chicken broth keeps things juicy and rich without salty overwhelm.
  • 1 cup heavy cream or half-and-half thickens and adds that rich mouthfeel you’re craving.
  • 2 tablespoons all-purpose flour to help thicken things up nice and smooth.
  • 1 teaspoon Worcestershire sauce gives a little umami boost in your bowl.
  • 2 tablespoons Cajun seasoning adjusts the heat just how you like it. Don’t shy on adding more if you want it spicy.
  • Fresh parsley for garnish that brightens the whole bowl.

Instructions

  • Melt the butter right in your pressure cooker pot over medium heat. It kinda smells like dinner already.
  • Toss in your diced onion, garlic, bell pepper, and celery. Sauté 'em until they turn soft and translucent. Usually, about 5 to 7 minutes does the trick.
  • Now stir in the smoked sausage. Cook it for 3 or 4 minutes so it browns a little bit and releases flavor.
  • Time to add those russet potatoes and chicken broth. Give it a quick stir so everything's combined, and get ready to lock that lid tight.
  • Set your cooker to high pressure. When you hear that valve hiss and steam cues telling you the job’s started, let it cook for about 8 minutes because potatoes cook fast under pressure.
  • Use quick release carefully to let out the pressure. Open the lid and whisk in the heavy cream and flour until your soup thickens up nice. Stir in Worcestershire sauce and Cajun seasoning. Taste it and add more spices if you want a bigger kick. Serve with a sprinkle of fresh parsley on top and dig in!

Notes

Store leftovers in an airtight container in the fridge. Make sure it cools before sealing to keep everything fresh and safe. You can freeze soup in portions using freezer-safe containers or heavy-duty bags. Just thaw overnight in the fridge before reheating. When reheating, use a low simmer to keep the cream from breaking and stir often for even warmth. Your pressure cooker’s sauté function is perfect for this.
