- 2 pounds butternut squash, peeled, seeded, and cubed
- 1 large apple, peeled, cored, and chopped Such as Granny Smith.
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- to taste none salt
- to taste none pepper
- 2 tablespoons olive oil

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes, or until it becomes translucent.
Add the minced garlic to the pot and cook for an additional minute, stirring frequently to prevent burning.
Stir in the cubed butternut squash and chopped apple. Cook for 5 minutes, allowing the squash and apple to soften slightly.
Pour in the vegetable broth and add the ground cinnamon and nutmeg. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 20 minutes, or until the butternut squash is tender.
Once the squash is cooked, carefully blend the soup using either a blender or an immersion blender until it reaches a smooth consistency.
Return the soup to the pot (if using a regular blender) and season with salt and pepper to taste. Stir well and let it warm through for a few minutes.
Serve the soup hot, garnished with a slice of apple and a sprinkle of cinnamon if desired.
You can adjust the consistency of the soup by adding more or less broth, depending on your preference.
