Equipment

  • 1 baking sheet
  • 1 oven or toaster oven
  • 1 mixing bowl
  • 1 cutting board
  • 1 serving platter

Ingredients
  

  • 8 slices ciabatta bread or any crusty bread
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes halved
  • 1 clove garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 10 leaves fresh basil chopped
  • 8 ounces burrata cheese use fresh for the best taste
  • to taste balsamic glaze for drizzling (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Arrange the slices of ciabatta bread on a baking sheet and brush one side of each slice with olive oil.
  • Toast the bread in the oven for about 5-7 minutes or until golden brown. Remove and let cool slightly.
  • In a mixing bowl, combine the halved cherry tomatoes, minced garlic, salt, black pepper, and chopped basil. Toss gently to mix.
  • On each toasted bread slice, place a generous amount of the tomato mixture.
  • Tear the burrata cheese into pieces and place it on top of the tomatoes on each slice.
  • Drizzle with balsamic glaze if using, and add a sprinkle of extra salt and pepper to taste.
  • Serve immediately on a platter.

Notes

You can add other toppings such as arugula or a sprinkle of red pepper flakes for extra flavor.
Make sure to use fresh burrata for the best taste.
If you don’t have cherry tomatoes, diced heirloom tomatoes can be used instead.
