Buffalo Chicken Grilled Cheese in the Pressure Cooker

This buffalo chicken grilled cheese is FULL of flavor and a great way to use leftover shredded chicken or rotisserie chicken. Warm, creamy, and a little zippy, this pulled chicken sandwich is easy comfort food at its finest.

  • ½ cup shredded cooked chicken roasted or leftover
  • 1 ½ tablespoons buffalo wing sauce spicy kick
  • 1 tablespoon sour cream or plain Greek yogurt or mayonnaise
  • ¼ teaspoon garlic powder subtle savory punch
  • ¼ teaspoon dried basil touch of herb
  • 2 slices bread thick for grilled cheese
  • 2 slices cheese cheddar or mozzarella
  • mayonnaise or butter for cooking

  • Mix your shredded chicken with buffalo wing sauce, sour cream, garlic powder, and dried basil in a bowl until combined.
  • Spread mayonnaise or butter on one side of each bread slice for a golden brown crunch.
  • Place a slice of bread butter side down on a skillet over medium heat.
  • Layer half the cheese on your bread in the skillet, spoon over buffalo chicken mix, and top with remaining cheese.
  • Place the other slice of bread on top, butter side facing up, until the bottom turns golden brown, about 3 to 4 minutes.
  • Flip sandwich and cook the other side until golden and cheese has melted, about another 3 to 4 minutes. Serve.

Notes

For best results, use leftover cooked chicken and mix all ingredients ahead of time.
